PUMPKIN AND GINGER CHUTNEY

Indian chicken salad sandwich that is nota curried chicken salad sandwich

Ingredients

  • 300g roughly diced pumpkin or butternut squash
  • 150ml fresh orange juice
  • 50g chopped or grated fresh garlic ginger paste
  • 75g sultanas or raisins
  • 300g sugar
  • 1 tbsp toasted cumin seeds

Method

  • Put all the ingredients into a heavy based pan, mix well and allow cooking down on a low heat for an hour until sticky and the squash must be translucent but still has a slight bite.
