PUMPKIN AND GINGER CHUTNEY

Ingredients
- 300g roughly diced pumpkin or butternut squash
- 150ml fresh orange juice
- 50g chopped or grated fresh garlic ginger paste
- 75g sultanas or raisins
- 300g sugar
- 1 tbsp toasted cumin seeds
Method
- Put all the ingredients into a heavy based pan, mix well and allow cooking down on a low heat for an hour until sticky and the squash must be translucent but still has a slight bite.
